Spinach Lasagna Recipe

Spinach Lasagna! 

This is my favorite lasagna recipe to date! 
Spinach Lasagna





Prep: 35 minutes ~ Cook: 1 Hour ~ Ready in: 1 hour 50 minutes





What you'll need:

  • 20 Lasagna Noodles
  • 2 Tbp. Olive Oil
  • 1 Cup Chopped Mushrooms
  • 1 Cup Chopped Onion
  • 1 Tbs. Minced Garlic
  • 2 Cups Fresh Spinach
  • 3 Cups Ricotta Cheese
  • 2/3 Cups Grated Romano Cheese
  • 1 tsp. Salt
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Basil 
  • 1/2 tsp. Ground Black Pepper
  • 1 Egg
  • 3 Cups Shredded Mozzarella Cheese
  • 3 Cups Tomato Pasta Sauce OR 3 Cups White Pasta Sauce (which I use)
  • 1 Cup Grated Parmesan Cheese

Directions


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of lightly salted water to a boil. 
  3. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
  4. In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender. 
  5. Drain excess liquid and cool. 
  6. Boil spinach for 5 minutes. 
  7. Drain, then squeeze out excess liquid. 
  8. Chop spinach.
  9. Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl.
  10. Add cooled mushroom mixture. 
  11. Beat with an electric mixer on low speed for 1 minute. 
  12. Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish. 
  13. Spread 1/3 of the cheese/spinach mixture over noodles. 
  14. Sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese on top. 
  15. Spread 1 cup pasta sauce over cheese. 
  16. Repeat layering 2 times.
  17. Cover dish with aluminum foil and bake in a preheated oven for 1 hour. 
  18. Cool 15 minutes before serving.
